Kiya's Aji-kiri knives are designed to fillet fish. The spines are thick, the edges are thin and delicate allowing you to handle the most delicate tasks. These are single bevel knives. Comes in a handy size with a 90mm body.
Story Behind the Brand
Kiya was established in 1792 as a cutlery store in Tokyo (then Edo). However, the origin of the company is traced back to 1571, the founding of a general trading company that was patronised by government officials of the era.
Since its establishment, taking pride in their name for serving people over the centuries, Kiya has striven to provide tools that that has long been long loved by many Japanese, from professional chefs to home cooks.
Kiya Knife Care Guide
To extend the life of your carbon steel blade make sure to dry any excess moisture after use to prevent rust. Over time, when in contact with acidic materials the blade will patina - this will help protect the knife from rust.
Carbon steel blades will stay sharp for a very long time but avoid using it against hard brittle objects such as stonewear or bones that will accelaterate dulling. Sharpen by hand or we recommend going to a sharpening specialist.
